We all love simple, quick and easy cooking, especially given our busy day to day lives. Here are a couple of tried and true recipes that have saved me time and time again over the years. Be it unexpected guests, a quick treat for the kids (and hubby!) or that plate you need for school functions, I have it covered.... and the best thing is they are very, very yummy!!
Super Quick Pancake Mix
1 cup self raising flour
1 tablespoon caster sugar
1 egg and a little milk
- Sift the flour and sugar
- Mix with egg and enough milk to make a batter consistency
- Cook in greased fry pan until mixture bubbles, then flip and cook on alternate side until golden brown
Choc Coconut Slice
1 cup coconut
2 tablespoons cocoa powder
1 cup self raising flour
1 cup milk
1/2 cup sugar
Simply mix all ingredients together and bake in a moderate oven (180 degrees or 170 degrees fan forced)
for 20-25 minutes.
